Mini Protein Pancakes

Kickstart your weekend  right here with some yummy protein pancakes!!!

Made with wholesome porridge oats, banana, egg and low fat milk. 

These mouth watering protein pancakes prove that being healthy does NOT  have to be boring or bland.

They are super simple to make, and are ideal for when you want something really tasty and satisfying. Plus, they are jam packed with protein!

They may be mini in size, but are guaranteed to keep all hunger pangs at bay right through until lunch time

I like to top my pancakes with a tablespoon of Greek yogurt, some fresh berries, a little drizzle of honey, and to finish, a generous  sprinkle of chia seeds.

My recipe makes 10 mini pancakes.  Perfect for sharing! 

What you will need ~

  • A medium non stick frying pan
  • A food processor (Nutri Blitzer)
  • Spatula
  • Knife
  • Spoon

Ingredients ~ ( Makes approx. 10 Mini pancakes )

  • 150 gm Porridge Oats
  • 1 Large Banana
  • 1 Large Egg (Free range because we love chickens)
  • 120 ml  Low Fat Milk
  • 1 tsp Bicarbonate of Soda
  • 1/2 tsp Vanilla extract
  • Low fat spray or low fat butter
  • Fresh berries or fruit of your choice
  • Honey
  • Greek yogurt
  • Chia seeds

Method ~

  • Pour the porridge oats into your nutri blitzer / food processor.
  • Blitz on high for 1 minute until the oats are broken down and resemble a fine flour.
  • Add in the bicarbonate of soda, egg, banana, milk and vanilla extract.
  • Close the lid and blitz again for a further minute until it has formed into a creamy pancake batter.
  • If the batter is too thick, just add another drop of milk. Or, if it is too runny, add some more oats and blitz again until the consistency is right . You want it to be lose enough to pour, but thick enough to hold a circular shape in the pan.
  • Put your non stick frying pan on a low heat.
  • Spray the frying pan with either a low fat spray, or add a small bit of low fat butter.
  • When melted, and the pan is warm, pour in the batter to form 2 to 3 mini pancakes. Fry them on a low heat for 1 minute. Flip the pancakes with your spatula, and repeat to fry them on the other side until they are golden brown. Continue this process until all of your batter is used up.
  • Wash, and cut up your berries, or whatever fruit of choice you wish to use.
  • Place the pancakes on a plate and stack as you please. 
  • Dollop with Greek yogurt. Then add your fruit, a drizzle of honey, and finish with a light sprinkle of chia seeds.

Sit back, relax, and enjoy this truly delicious breakfast!
