♥Rolo Cookie Cups ♥

Do you love anyone enough to give them your last Rolo??!!

Well, no need to panic, as there are plenty of Rolo's to go around in this delicious recipe!

What you will need ~

  • Large Mixing bowl
  • Whisk
  • Spatula
  • Wooden spoon
  • Large spoon
  • Small Saucepan
  • A 12 Hole Muffin tray
  • Cake release spray
  • Large knife
  • Cutting board
  • Wire rack

Ingredients ~ (Makes 6 Medium Rolo Cookie Cups)

  • 138 gm Plain Flour
  • 1/2 Tsp. Bicarbonate of Soda
  • 1/4 Tsp. Salt
  • 1/2 Tbsp. Cornflour
  • 1 Tbsp. Cocoa Powder
  • 58gm Unsalted Butter
  • 68 gm Light Brown Sugar
  • 28 gm Caster Sugar
  • 2 Tubes of Rolo's
  • 100 gm Milk Chocolate - cut into small chunks 
  • 1 Medium Egg (Free Range because we love chickens)
  • 1 tsp Vanilla Extract

Method ~ 

  • Pre heat your oven to 180 degrees 
  • Spray the middle 6 holes of the muffin tray with the cake release spray
  • Cut your milk chocolate into small pieces and leave to the side.
  • In your large mixing bowl, add the flour, cocoa powder, bicarbonate of soda, cornflour and salt. Combine together fully.
  • Take your saucepan, and melt the butter on a low heat.
  • Add in both sugars and mix together with a whisk until the sugars have melted and the mixture is nice and smooth.
  • Crack in your egg and add in the vanilla extract.
  • Mix again with your whisk until fully combined.
  • Gently fold in your dry ingredients, the chocolate pieces, and the Rolo's with your wooden spoon. Continue folding until the mixture turns into a nice soft cookie dough.
  • Using a large spoon, scoop up 6 individual tablespoons of the cookie dough and place into the muffin tray holes. 
  • Bake the cookies for 10 - 12 minutes until they are crispy around the edges but are still soft in the middle.
  • Take them out of the oven and after a few minutes of cooling, gently press down in the middle of each one using an Individual Rolo. 
  • Leave them to cool down fully in the muffin tray before removing. Transfer them to a wire rack to cool further. 
  • Or, eat them warm with a dollop of ice-cream  for the ultimate experience!
