



If you're like me, the start of the new year is like pressing a reset button. A chance to start over.
Part of my reset, and my new years resolution is to be more healthy and to be more mindful of what I eat.
However, I do love to snack during the day, so when banana's or apples don't exactly cut it, this recipe is definitely the answer.
A guilt free, HEALTHY, fruit and nut flapjack! So here it goes.......
What you will need ~
A large mixing bowl
A wooden spoon
A spatula
A small saucepan
A large knife
Parchment paper
Small baking tray (rectangular in shape with high sides)
Ingredients ~ (Makes 8 square flapjacks)
200 gm Porridge oats
30 gm Mixed seeds (pumpkin / sunflower / linseed)
30 gm Chopped nuts (hazelnuts / peanuts / almonds)
60 gm Raisins
100 gm Low fat butter
1/2 Cup of honey
1 tsp Baking powder
1 tsp Vanilla extract
Method ~
Preheat your oven to 180 degrees.
Melt your butter in a saucepan on a low heat and stir with your wooden spoon.
When the butter is melted, add in your vanilla extract and stir again until combined.
Using your large mixing bowl, add in all of your dry ingredients and mix them together.
Once slightly cooled, pour in the melted butter and make sure to coat the dry ingredients as evenly as possible. Use a spatula for this as the mixture doesn't stick as bad.
Pour in your honey and repeat this process.
Line your baking tray with parchment paper.
Gently topple in the mixture on the lined baking tray, and press the mixture down firmly. Press along the high side of the tray.
Bake in the oven for 15 minutes until golden brown.
Using a large knife, cut into 8 equal squares while they are still warm. They will harden slightly as they cool down.
