Halloween Cookie Bars

Come closer..... they won't bite!!

These delicious chocolate chip cookie bars, are topped with melted sticky marshmallow, spooky sprinkles, and yummy chocolate spiders made from Maltesers.

My oh so gooey Halloween Cookie Bars are definitely the perfect bake when its time for....

"Trick or Treat..... Give me something nice to eat".....

What you will need ~

  • Scales to measure ingredients correctly
  • 2 mixing bowls
  • An Electric Whisk 
  • Sieve
  • A Spatula 
  • Parchment paper
  • 8x8 Square tin
  • Wire rack
  • A Large knife
  • A Chopping board
  • Wilton chocolate melt pot (Or use your microwave to melt your chocolate)
  • 1 Piping Bag
  • Small cake brush

Ingredients for Halloween Cookie Bars:

  • 270 gm Plain Flour
  • 1/2 Tsp. Salt
  • 1 Tsp. Bicarbonate of Soda
  • 1 Tbsp. Self raising flour
  • 115 gm Soft Unsalted Butter 
  • 100 gm Light Brown Sugar 
  • 100 gm Caster Sugar
  • 1 Large Free Range egg (because we love chickens)
  • 1/2 Tsp. Vanilla Extract
  • 300 gm Chocolate Chips(You can use either Milk, Dark or white chocolate)
  • 1/2 a pack of Mini Marshmallows
  • A fun size packet of Maltesers
  • Edible candy eyes
  • Edible Glue
  • Halloween Sprinkles
  • 4 Squares of Dark Chocolate (for spider legs) 

Method:

  • Heat your oven to 170 degrees. 
  • Line your baking tin with parchment paper.
  • Add your plain flour, bicarbonate, salt & self raising flour to your mixing bowl and mix together until combined.
  • In your other bowl, melt the butter completely. Then add in both sugars and whisk until dissolved and the mixture is nice and smooth.
  • Crack in your egg and vanilla extract and mix again for another minute.
  • Add in your dry ingredients to the mixture and stir them all together using your spatula until it forms a nice smooth cookie dough. Add in your chocolate chips and mix until they are evenly distributed in the dough. 
  • Pour your cookie dough batter into your lined baking tin and using your fingers, press it out evenly to each corner of the tin.
  • Bake in the preheated oven for around 20 / 25 minutes and until the square cookie looks nice and dry on top.
  • Remove from the oven and allow to cool before transferring to a wire rack to cool fully.
  • Let them cool completely before decorating them.

Decorating the Cookie Bars ~

  • Now the square cookie is cooled completely, remove the parchment paper and transfer the cookie to a large chopping board.
  • Take your knife and cut the square cookie into 9 small even square slices.
  • Melt your chocolate in your melting pot (or microwave) and allow to cool slightly.
  • Melt your mini marshmallows in the microwave and add 1 Tbsp. of water to them beforehand so the don't burn.
  • Spread your melted marshmallows on top of each cookie, and add your sprinkles.
  • Take your piping bag and fill it with the melted chocolate. Cut the end of piping bag so the chocolate starts to come out slowly.
  • Take the piping bag and squeeze a small amount of chocolate onto the middle of each cookie square, then add 2 Maltesers to the melted chocolate on each square to form the spiders head & body.
  • Pipe more chocolate on each side of the spider to create 8 chocolate legs. 
  • Using your small cake brush and edible glue, glue on 2 candy eyes to each spider head to finish.
  • Continue the process until all of your cookie bar squares are complete!
