Fruity Flapjacks

My yummy fruity flapjack recipe is just screaming  Autumn vibes!

Soft, chewy and so delicious, they are packed with flavour and make the perfect afternoon pick me up.

I cant resist one after an long stroll in the rain. At home, cozy, with a warm cup of tea..... my idea of Autumn bliss!

What you will need ~

  • A Medium Saucepan
  • A Wooden Spoon
  • Square shaped Baking Tin
  • Parchment Paper
  • A Spatula
  • A Large Knife

Ingredients ~

  • 250 gm Porridge Oats
  • 125 gm Mixed Peel
  • 1/2 Tsp. Vanilla Extract
  • 1 Tbsp. Golden Syrup
  • 175 gm Brown Demerara Sugar
  • 175 gm Unsalted Butter

Method ~

  • Preheat your oven to 220 degrees celsius.
  • Line your baking tin with parchment paper
  • Melt the butter, sugar, golden syrup and vanilla extract on a medium heat in your saucepan.
  • When the sugar granules have completely dissolved, turn off the heat and poor in the porridge oats and the mixed peel.
  • Take your wooden spoon and mix together well.
  • Pour the flapjack mixture into your lined baking  tin and spread it evenly using your spatula.
  • Bake in the oven for 20 - 25 minutes if you want them soft and chewy. Or, if you like a really crispy flapjack, bake for 30 minutes.
  • Once baked, take them out of the oven and allow to cool slightly for 5 minutes.
  • Take your large knife and cut them into 8 evenly shaped flapjack bars. 
  • Allow them to cool completely so they harden and dont fall apart.
  • Sit back, relax, and enjoy with a largecup of  freshly brewed tea.
