Christmas Pudding ~ Chocolate Biscuit Cake

Who doesn't love chocolate biscuits? Or even better, a cake that's loaded with them! Yes people, I'm talking chocolate biscuit cake!

As you begin to dig in, you will notice other sneaky surprises like delicious  hazelnuts, mini marshmallows and yummy Maltesers :)

What an absolute treat!

As it's nearly Christmas ,  I decided to do a festive version of chocolate biscuit cake this year, and created a fun Christmas Pudding!

What you will need:

  • Large heat resistant Mixing Bowl
  • A large pot
  • Wooden spoon
  • Spatula
  • Pudding bowl
  • Cling film
  • Potato masher
  • Rolling pin
  • Knife
  • Edible glue
  • Small and medium sized cake brushes
  • Leaf cutters, snowflake cutters, and a mini gingerbread man cutter

Ingredients ~

  • 300 g Milk Chocolate
  • 100 g Dark Chocolate 
  • 200 g Digestive Biscuits
  • 100 g Rich Tea Biscuits
  • 125 g Golden Syrup
  • 125 g Unsalted Butter
  • 100 g Mini Marshmallows
  • 100 g Hazelnuts
  • 70 g Maltesers

For Decorating ~

  • Fondant  (Red, Green, White, light brown)
  • Sprinkles in festive colours
  • Mini coloured  smarties
  • Edible gold glitter and gold paint

Method ~

  • Take your large pot and fill it 1/4 full with hot water.
  • Leave on your cooker on a very low heat
  • In your large heat resistant bowl, add in your butter and golden syrup and place the bowl on top of the pot.
  • The butter will begin to melt, and you will need to stir with your wooden spoon in order to help the golden syrup to break down and combine with the butter.
  • Once combined, add in your chocolate. This will take a few minutes to melt completely, so it is important that you continue mixing.
  • Once all of the chocolate has melted and there are no lumps, turn off your cooker and take the bowl off of the pot and leave it aside to cool slightly.
  • While you wait for it to cool, break up all of your biscuits, and cut the hazelnuts into halves.
  • Add your biscuits and hazelnuts into the melted chocolate and using your wooden spoon, mix them together until all of the biscuits are completely covered in chocolate. Add in your mini marshmallows and maltesers next, and mix again fully.
  • Line your pudding bowl with cling film and leave enough cling film to hang over the edge of the bowl as you will need to cover it later.
  • Pour the chocolate biscuit cake mixture into your pudding bowl and use your spatula to scrape everything from the bowl. Next, push down on the mixture using your potato masher in order to get rid of excess air bubbles and to ensure the mixture is evenly distributed in the pudding bowl.
  • Continue this process until the bowl is nearly full. Leave a space of about 3 mil at the top.
  • Set aside and leave it cool for an hour. Cover the top with the hanging cling film, and pop it into your fridge to let it set overnight.
  • Once it is set, take it out of the fridge and turn it upside down to remove it from your pudding bowl. This may take a few minutes, and works best if you leave the bowl to come to room temperature before removing it. Place it onto a cake board for decorating.

To Decorate ~

  • Roll out your white fondant and cut out a "splat" shape, and also cut out some snowflakes with your cookie cutters.
  • Using your medium cake brush, paint on some edible glue to the top of the chocolate biscuit cake. Place the splat shaped fondant on top and press it down to secure.
  • Next, roll out your green fondant and cut out leaves with your holly cookie cutters. Again, using the edible glue, glue the leaves on top of the splat shape (as per the pictures above)
  • Roll out three small balls in red fondant and glue them in the middle of the holly leaves.
  • Roll out some more red fondant in the shape of a small banner. Use some edible gold paint to write Happy Christmas on the banner with your small cake brush and fix the banner against the side of the cake.
  • Roll out your light brown fondant and cut out a couple of mini gingerbread men, decorate them and fix them to the sides of the cake. Continue to decorate your cake with sprinkles, mini smarties, candy canes, and more cute snowflakes, or whatever tickles your fancy.
  • Gently spray edible gold glitter over the top of the cake for a sparkly finishing touch.
